Smoque thread  I went looking for some info about the idea of a Chicago tradition.  There's not much to be found online, which is 
probably not surprising, but I did find this nice site which will be of interest to many here (I'm sure some have seen it before)
The Southern Foodways Alliance Barbecue Oral History Project 
with separate sections on 
Memphis and 
Rural Tennessee
Lots of nice photos and interviews with the proprietors of several places.
This is part of a broader SFA
