    for the sushi roll experts...when the menu includes cream cheese in a maki roll, is it actually just philadelphia cream cheese or is it some kind of special japanese cream cheese similar to their spicy mayo?

    I've always wondered this myself. I like the spicy mayo in my maki rolls, but I'm a bit hesitant on the cream cheese...doesn't seem right. I always think they may be using the term 'mayo' and 'cream cheese' synomously but I'm not daring enough to test my theory. Looking forward to replies...

    When the maki includes cream cheese, the maki is meant for whitey. It is not a special japanese cream cheese. It's whitey cream cheese.

    This is most definitely not the case. The Japanese eat mayo quite a lot, but it's not the same as American mayo or even European aiolis.

    Cream cheese, as gleam pointed out, is just cream cheese, and a nouveau-American-maki addition.

    I'm not a sushi roll expert (at least not the ones that involve cream cheese*) - but typically the rolls that do include cream cheese use philadelphia cream cheese. These are not surprisingly called Philadephia rolls (typically, and usually also involve smoked salmon). I'm not sure there is a 'Japanese' cream cheese.
    However, rolls (or sauces) that involve mayo may use the Japanese brand kewpie . This has a very different flavor profile from say Hellman's mayo. Spicy mayo is basically a mixture of mayo (preferably kewpie), sriracha and chili oil.


    *I take to such maki-rolls like an archibutyrophobic would PB&J sandwiches
