I've been having trouble finding a bakery/market that has a good variety of breads (ciabatta, foccacia, etc.) I have checked out most of the super markets, but do not know where else to look.

Can anyone direct me to some places on the North Side? Or a possible thread about this topic?

    Thanks for you help.

A topic dear to my heart...

Here's an old but not irrelevant post on bread:

My favourite small ethnic bakery, for a variety of reasons, is Masi's Italian Superior Bakery:

Treasure Island grocery stores have a great selection of bread from bakeries from places as far away as Grand Street and even Paris (Poilane).

For the sort of variety of breads you're looking for, I would strongly suggest you make a trip to Fox & Obel.

Everything Antonius said is true. I would also add Linconlwood Produce as a place that has a wide variety of breads including all you asked about and more.

how about really excellent sourdough? I've seen Boudin at Treasure Island but I'm looking for better quality, and fresh-baked. Tried it at Trader Joes and Whole Foods as well, but each was disappointing. or really dark German bread, like spelt?

For the German style heavy farmer type breads with huge rye content, here is where you must go, post-haste.

Also great pastry, lovely sandwiches, and delicious soups.

Do a search using the terms Austrian Bakery and read HungryRabbi's posts from 2005/6 for a great write-up.

Fresh Farms has a pretty huge selection and their baguettes are quite nice.
