    I pretty well know the cuts of meat from a cow thanks to my food purchasing nun teacher in college, however, my daughter keeps kosher and last Friday she invited us for a beauty roast dinner. Now, I know of no part of the cow called beauty. I remember beauty steaks from kosher butchers as a kid but never paid much attention. I know its from the forequater but thats about it. Does anyone know where this comes from and what it would be called in a non kosher butcher shop or meat counter.

    The internets tell me (so take it with a huge grain of salt) that "beauty steak" is a term that can mean either a ribeye or a boneless chuck eye roast/steak.

    My guess is that the latter is what you grew up with. Hopefully someone with more knowledge can clear it up tho.

    Ed,

    I'd have to respectfully disagree. I vaugely remember hearing the term beauty steak as a child growing up in a Kosher home. The only steaks I can remember ever eating were ribeyes, along with the occasional skirt steak on the grill.

    From the looks of the roast I thought it might be ribeye, but you can get kosher ribeye. Somehow I think it is the end of the rib closest to the chuck or vice a versa.
