    The law says 60 days at a minimum of 35F:

    And Dom, no worries. There are a lot of feds who don't know the law, for better or worse.

    This undated, unsourced page from WiseGeek agrees with Ed's assertion about 60 days.

    I know some people who know a "secret" artisanal raw milk cheese producer in the Bay Area; they brought be a big hunk when they stayed over for a weekend, but my cheese tolerance is pretty low, so I passed it on untasted to someone who would have appreciated it more.
