Can you recommend how I should cook fresh green beans for about 70 people? I usually steam them but thats just too many beans for my small steamer.

Also, I had planned on corn on the cob also. I was thinking about wraping it in foil with some water in the Nesco. I'm at a complete loss. Any suggestions will be apprecialted.

Green beans roast decentlyl.. toss them with some oil and salt and pepper and maybe a little shallot or herbs and roast them at 350 until they're soft. It'll probably take a little while.

You can also pre-steam them in batches and hold them to speed up the roasting process.

Same goes for the corn, roasting should work fine, as would the grill.

another possibility for the corn is to borrow a big turkey fryer from someone and boiling them in that.

Not to forget C2's corn-buttering innovation at last year's picnic: a bowl or pot of warm water with a thick skin of melted butter into which you dip your ear of cooked corn.

You could also oven-steam: put veggies in a deep roasting pan, cover tightly with aluminum foil with one corner open, put in hot oven, pour boiling water from kettle into open corner until the bottom is covered by about 1/2", cover and leave until desired doneness.
