Well, you can get pretty much anything for breakfast, and a lot of Mexicans eat tacos or tortas for breakfast. All of the antojitos that are made "in-house" are great at Quebrada including the gorditas, the sopes, the picaditas (like sopes w/o meat), the huraches, and the tacos. But, there is a ample selection of Mexican breakfast. Most of them are variations of eggs with sauces or eggs scrambled with things--one of the chowhounditas loves the eggs con tocino, which is eggs scrambled with bacon. My wife adores Quebradas chilequiles, torn pieces of tortillas (fresh made) soaked in either a red sauce or a green sauce. On the side you can have Quebrada's excellent salted beef, cesina.
