    Hi,
    Mom and dad are on their way and I want to have a really special meal for them. I was thinking of planning the menu around Rick Bayless' Mango Avocado Salad. And some sort of peach dessert (mom's favorite). The starters are no problem.....it's what to accompany that salad with. They do eat meat and I have to go easy on the spice.

    Avocado-Mango Salad with Fresh Cheese and Toasted Pumpkin Seeds
    From the Mexican mind-set, both buttery avocado and tropical mango derive beautiful benefit from chili, salt and lime. All three form a foundation for this avocado-mango salad's dressing, along with sautéed garlic's savory aroma and honey's mellowness. Add the crunch of toasted pumpkin seeds, the tenderness of Boston lettuce and the savory saltiness of crisp bacon and fresh Mexican cheese, and you have a compelling salad. It's the least substantial of my main course salads -- perfect for hot-weather appetites.

    Do you want a first course or more of an amuse? I've got a few recipes I think might work.

    I was thinking of a white bean dip and/or some fresh salsas...........I grow my own peppers.....though I think mom would be happier with something less spicy.

    ps,
    I am apt to change at the last minute......not sure why that salad is so enticing. I'm open to scrapping it all if need be. I would love to make dishes ahead of time as I have a tiny kitchen and i'm always huffing and puffing to plate up dinner before things get cold.
    ps,
    mom and dad only visit once a year :oops: so I try to make it special!

    For dessert, I suggest something I made recently, a peach praline semifreddo.

    Definitely a do-ahead dish.

    This is what I'm cooking on Saturday for 4, if you want any of the recipes let me know.

    Amuse
    Parmesan crisp with goat cheese mousse

    First
    Tomato Tartare with Shallot dressing (this is a great dish since it looks just like filet tartare)

    Second
    Sunshine on a plate- Corn Nugget Crab Cakes with Tartar Sauce

    Third
    Filet Mignon with Simple Syrah Sauce served with Potato Napoleons

    Intermezzo
    Rasberry Sorbet

    Fourth
    Vanilla and Chocolate Macaroons
