    Hey everyone! I've been lurking around the forum for a bit over a year now, and decided it was time I registered! So this is my first post!

    My family got together this past Monday and had a Mexican feast with some help of a friend of the family (my brother-in-law's Mom's boyfriend). We purchased the ingredients at our local Mexican grocery store in the afternoon and cooked it all up in the evening.

    Shrimp and Chorizo w/ Cactus and Tomato

    I don't have exact measurments for the Shrimp & Chorizo, but you could probably eyeball it easily enough. We used:

    Chorizo
    Shrimp
    Nopales(cactus)(thin slices)
    Tomatoes (diced)
    Onion (diced)
    Jalapenos (minced) (add more or less to taste)
    Garlic
    Cumin

    Saute the onion a bit until it's clear, then stir fry the chorizo with the garlic and cumin. When that's cooked add in your tomatoes and jalapenos. Add the shrimp and nopales last, since they cook quickly.

    BBQ Pork Short Ribs and Carne Asada

    Avacado Ensalada (salad)

    Salsa

    1/2 diced onion
    cilantro
    juice from 1 lemon
    garlic
    4 cans of tomatillos
    1 small can of chipotle in adobo sauce

    Combine it all and blend to your desired consistency. It's best (and easiest) if you have an immersion blender (the white thing in the first two pics of the salsa)

    What a lovely beginning and quite a lovely meal you had.

    Do you care to comment on the marinade and any cooks for cooking the pork ribs? What differences, if any, would apply to beef ribs?

    If I am asking more questions than you may be able to answer. Don't sweat it, somebody else here will comment. :)

    Unfortunately, I forgot to ask what he was marinating the ribs in. They had already started in with a bit of the preparation and cooking while I was still at work. I'll have to ask my brother, who might know, as he was there before me.

    Do you live in Detroit? Or were those "imported" tortillas? :)

    Until Amata's sharp eye caught the possibility that you weren't local, I was going to suggest that with food like that, you should come to the picnic next week! Looks delicious!

    My brother lives in Chicago (which is how I discovered the forum), and I live near Detroit. I'm very familiar with Chicago though, as I went to school at Columbia and the Art Institute for about 5 years.
