Anyone know where I can purchase these?

These are the little rum cakes Tru used to give away after your dinner. I've tried Sur la Table and Williams-Sonoma with no luck for the molds.

Thank you if you can point me where to go!

    Snark,

I got mine from http://www.jbprince.com. Do a search on "cannele". I prefer the tin-lined copper ones, but they are expensive and require more care to unmold. Coat the inside with melted beeswax and butter.

I had these in Bordeaux for the first time in my life last year and am totally addicted to them.

    Bill,

Have you tried making these in the silicone molds? If so, I was curious whether they give you the same crisp exterior you get with the copper molds?

My experience is silicone is not as crisp as the copper molds, but a lot easier to clean

    Jyoti,

Yes, sort of. Before I shelled out for the metal ones, I tried making them in some small silicon molds I have that are the right volume but the wrong shape. The exterior did not have that incredible crisp exterior I was looking for.

I noticed the price on the metal molds has gone way up. Weak dollar, I guess.

I got 6 about a year or two ago at Sur la Table (in Lincoln Park). I asked a salesman if they had them but he didn't know what they were. So, I decided to search thru the various molds on the shelf myself and found them. They were tucked way in the back.

As an aside, does anyone know of any bakery/patisserie in Chicago that sells cannele? I tried Vanille a year or two ago and they obviously knew what I was asking for but don't sell them, unfortunately. In general, I find that very few people know what cannele are--they always think I am asking for cannoli and then direct me to the nearest Italian bakery!
