    Does anyone have any suggestions on cooking them? I just picked up a great bunch of them (parsnips attached, obviously) and it seems like a waste to throw away all the green stuff. Unless of course, that's what I'm supposed to do.

    Any experience on making them tasty/edible? I was thinking of a run of the mill greens experience, sauteed with some bacon and onion, but I'm all ears/eyes for any other suggestions.

    Hmmm. I'm usually a big fan of eating vegetable tops: I grow Kohlrabi almost exclusively for the greens, but that's a new one on me.

    A bit of googling turned up the following on carrot tops and further searching found a delicious-sounding Gallician recipe with parsnip tops: Lacon con grelos Though I also found an article that suggests they can cause a rash(during harvesting, may have nothing to do with eating)

    And, of course, google being the LTH fan that it is, I turned up this post!
