This was recorded in conjunction with last week's Chicago Foodways Roundtable meal based on Jains culinary sensibilities. I missed most of the interview, which everyone else present said was very interesting. I look forward to hearing this program.

What caught my attention was "Eight Forty-Eight food critic David Hammond" -- as in, this isn't a blip on the radar, you're part of the team. Very cool.

I enjoyed the discussion. Brought back lots of memories -- though of course I go back farther than 25 years (as do some of our top restaurants). Jean Banchet was magic -- and he, too, raised up a lot of the top chefs in town.

One note on the trends in fine dining -- a major trend over the last 25 years has been getting away from fine dining being all about couples. Top restaurants are now commonly destinations for a girls' night out, or lone diners who are serious about focusing on the food. And sometimes groups of folks from LTHForum. Good thing, too, for us single girls. I don't think I'd want to have to wait for a date to take me to Aliena.

let me tell you, my farm could have supplied the nation with nettles. i had to chase a calf through a field of nettles and was in misery for about 24 hours. so if anyone's interested they have to be the easiest thing in the world to grow.

I didn't participate in the cleaning of the stinging nettles, but I liked the taste. I probably have some in my front yard, pushing through right now.

What about the poor cow!

Chef Virant did where gloves while handling the nettles. Also, the nettles do lose their sting once cooked.

justjoan, I actually had an 8:30 call, so I'll have to listen on podcast (which, incidentally, enables you to go directly to the segment without listening to the whole show).

I used to listed to Jake Hartford who used to fill that time slot. One of the most loosey goosey programs on WLS. I am used to being up at that time, so I will likely hear you.
