    I've really gotten into baking. Lately I have been making bread and thanks to Peter Reinharts last two books, The Bread Makers Apprentice and The Whole Grain Bread Book, I have become quite successful.

    Now I want to make bagels. One of the ingrediants is malt. King Arthur Flour has malt but it is $4.95 for a pound. It seems like it would be more expensive to ship it then the malt costs. Does anyone have a suggestion on where to buy nondexterious malt used in bagel making.

    Did you try calling Whole Foods or another natural foods store? I think I've seen malt both for baking and beer making in places like that...

    Brew and Grow at 1824 N. Besly would have it. You could probably also find malt at health food shops or some grocery stores, but a homebrew shop would probably be the least expensive since they buy in bulk.

    FWIW, I prefer barley malt syrup over powdered malt in my bagels. Easy to get at WFM or health food stores.

    Thanks about the tip for barley malt syrup. I was told Whole Foods doesn't carry malt but I will try them.

    Malt syrup is also easy to get at asian grocers, but it's usually rice malt.

    After thinking about the malt syrup, I have a question. Does the syrup alter the formula for bagels and if so how do I adjust.

    Joel, after looking up malt on King Arthurs web site there are two different types. One is an enzyme and one is the one used for bagels. It is the nondexterious type and it is made from barley.
