I'm hoping to serve a roast suckling pig (Julia Child's recipe in volume 2 of Mastering the Art) for New Year's eve.
The problem is, her recipe calls for a small one -- only 12 lbs or so -- and when I called Gepperth's to order one, the owner told me that they are hard to find that small. Says they usually run around 30lbs or so -- for the grill.
But, I'm looking for one small enough to fit in my roasting pan -- a real baby pig with tender skin.
Anybody ever have luck finding this size? Maybe in Chinatown?
If so -- any recommendations would be appreciated.
