    With gnocchi to pinch, I wasn't there per my custom tonight, but I am planning on swinging through Pilsen for some brisket next Wednesday (12/12). It is best to get to Honky Tonk on the slightly early side, so I'm recommending 6 PM to get the conversation going. We can take our time once claiming a table, and then perhaps get some after-birria down the street. What say ye?

    I am flexible with both the time and date (Thursday is second best next week), especially if there are moderator nudges in a particular direction. If we know well in advance, we might be able to point the proprietors in an off-menu direction by networking through our DH.

    Sometimes you can get birria at honky tonk too.

    That's what I hear; perhaps we can do a side-by-side with Reyes de Ocotlan.

    that's not a bad idea. i'm planning on making another birria there soon.

    ChErain, if you do have a birria event coming up, please do post about it here. The chunks I sampled of your stuff were very tasty.

    Santander, not sure I can make the 12th, but Willie Wagner (owner of HTBBQ) seems very open to customer input, so if you contact him and suggest an interest in "off-menu" items, he might very likely try to accomodate. My sense is that he's still experimenting (to some extent) with menu items.

    Since there hasn't been any LTH response, I'm gathering some other friends after a meeting in Kenwood. I'm not sure when we'll be there, but it is unlikely to be right at 6:30. If anyone was definitely planning to go and just hadn't replied, please write here or PM me and I'll get you whatever the new time turns out to be (though I won't likely know until about 5 PM).

    went to honky tonk tonight for dinner and willie had smoked veal chops with a reduction puree from the drippings, sauteed shitakes, garlic, and carrots. still chunky though. with smashed potatoes and a side of lobster!!!!!
    i brought in my hidden bottle of oregon pinot noir and it was great.
    i snuck in some pulled pork too. great dinner.

    i got a chance to make some birria at honky tonk friday night. couldnt really share it since it was for a party. but i am planning on doing some more soon.
