Hello and Happy New Year !
We hope to be at the Buzz Cafe courtyard on Saturday, January 13 at 12:30 to 3:00.
We will be bringing Beef, Pork, 1/2 Turkeys and Chicken Breasts, Chicken wings and Eggs. Feel free to contact us for preorders. Phone 309-376-7291 or e-mail us. dennis@wettsteinorganicfarm.com
I highly recommend them. All the meats I've had have been excellent and their eggs will bring tears to your eyes--in a good way.

The meats are generally frozen, although at the end of the farmers' market season they were bringing fresh turkeys.
Note the particulary good prices on organ meats. Although they don't mention them in the price list, at the Oak Park Farmers' Market they generally had frozen chicken hearts and gizzards as well at good prices. I'm also sorry to see that apparently they aren't planning to bring any whole chickens. I roasted a couple of their chickens for a family dinner in the U.P. that would make it on my 10-best list for the year. But everything I've tried has been excellent.

You've had the Wettstein's pork, they are the producers we met with Joel Smith in Evanston, I remember you buying pork as did I. Wettstein also supplied the meat for the Honey 1 comparative tasting segment of the BBQ Tour I did last summer for Slow Food.
I thought Wettstein's pork quite good and may head up to Oak Park for pork and to try some of their other products.

Post #10 - January 31st, 2007, 7:55 amApologies for constantly replying to my own post, but I roasted myself a Wettstein chicken last weekend (in my freezer since October). This is how good the Wettstein's chickens are: They're so good I'll eat the white meat! Even without brining!
As I always do with a chicken, I ate the dark meat first, followed by the wings. As I was coming home last night I was trying to figure out what to do with the breast. I'd decided to make a chicken salad of some sort, but then when I pulled it out of the fridge I tore off a hunk of breast and tasted it. Fabulous! I couldn't believe it. There I was, voluntarily eating chicken breast. Slightly overcooked chicken breast, in fact, since I roast with an eye to the doneness of the dark meat. That's a mighty good chicken, folks.

Just to add a couple of things. First, if anyone has ever got the eggs from Henry's Farm at the Evanston's Farmer's Market, well those are actually the Wettstein's eggs. Second, as great as their stuff is, even greater is their farm itself. There are always opportunities to visit through organziations like Seventh Generation Ahead. My current recommendation is their smoked ham hock. At $2 per pound, it's practically as cheap as the ones in the grocery stores, with about three times the meat and ten times the flavor. I got at least two cups of lovely meat off the last one.

Post #19 - February 21st, 2008, 8:55 pmI know I've sung the praises of the Wettstein's ham hocks before, but now let me illustrate.
They're HUGE as indicated by this photo of a Wettstein's hock in a dutch oven with a regular supermarket ham hock for comparison (both still with ice crystals from the freezer--and the supermarket one went right back there)
When I'd finished making my stock, I took off the skin and deboned the meat. It came to three full cups of fabulous porky goodness (actually, it came to more, but three cups worth made the treacherous lift from the pan to the measuring cup without getting "sampled" on the way).
Another hour later and I had a great pea soup. For the localvores out there, in addition to the Wettstein's ham hock, I also am still using up a cabbage and a bag of winter keeper onions from the last Oak Park farmers' market.

Also we have half turkey # 6 - 13#
and whole turkeys #15 - 26#.

Those chicken backs and ribs make wonderful wonderful soup and the eggs are getting better and better as spring progresses. That's a mighty fine price on duck and turkeys, too.
