    Thank you for your generosity in posting this very useful list. One correction: Fox & Obel does not carry foie gras. Geppherth's does.

    Another potentially useful note: Chicago Game - which is indeed a terrific place - accepts cash only.

    where do people buy whole briskets for BBQing in Chicago? At Paulina market they were $4 a pound which seems expensive.

    I am certain. I bought a pound of Hudson Valley Foie Gras there about a month ago. I don't believe the ban has anything to do with retail operations - just restaurants.

    Re: Geppherth's FG: it is very pricey, $65 a pound if memory serves. Give Chicago Game a day's notice, and they'll get it to you for half that. Unfortunately, I was in a pinch and so paid a premium.

    I used to buy from Chicago Game when I was buying Foie. I had just assumed the ban applied to retail as well and haven't even bothered calling.

    BTW I would not recommend Johnny G's for brisket..last time I ordered a packer there they tried to pawn off a Select cut on me..as far as Im concerned a meat market shouldnt even be carrying Select
    They do have great homemade Italian Sausage though

    I'm going to have to get you boys out further west of Chicago. I go to a nice buthering house west of Rockford. You take your animals (the usual, steer, pig, chicken, deer) and they custom cut and pack it for you. They also smoke their own meats. Of course there is a retail outlet. Very nice!

    Hi,

    I'll be test smoking bone-in pork shoulder butts from Twin Oak Meats, Hoffer Farms, and hopefully Gunthorp Farm in the next month. If I have any great revelations, I'll be sure to post them in this thread. One thing I've found, pork shoulders from non-factory farms tend to be lean. If your source can do custom cutting, I'd ask them to leave 1/4" fat cap.

    The last two times I smoked brisket (New Years, and in November) I got my packer cut from Peoria Packing. IIRC, it couldn't have been more than $2 a pound.

    Definately a great list. After our meal at Hole-in-the-wall, I purchased all the ingrediants in your 5 step program. Weather dependent step 1 kicks off this weekend.
