You are most likely thinking of grilled beef served with thin rice noodle and an array of herbs and veggies to roll table side in rice paper. Choices are, at least in Chicago, typically beef, pork, shrimp or chicken.
This is not an uncommon dish, for example it may be found at Hai Yen under
Nhung Giam Hoac Nuong Vi, though the other dish you may be thinking of, Bo La Lot, which is marinated beef wrapped in bo la lot (an aromatic leaf) then grilled, may be slightly less common.
