Sometimes I forget how wonderfully satisfying it can be to make a simple soup with the best ingredients of the season. Indulge me as a share photos from yesterday's endeavor, which reminded me why I love to cook.
Beautiful local ramps, potatoes, fennel.
Ramps sweating in butter, creating an intoxicating aroma throughout the house.
Potatoes and bright-green ramp tops added to the pot with chicken stock:
Blend, then strain. The ramp tops create a beautiful pale green color that screamed springtime to me.
Sliced fennel tossed with olive oil and sea salt, then roasted:
Potato-ramp soup with caramelized fennel, garnished with fennel fronds.
