Best international culinary vacations?

I have found I really enjoy traveling with a food direction. Last year my friend and I took some great cooking classes down in Mexico and quite enjoyed the trip. Previously I have done some classes in Italy and had equally as much joy.

Now we are starting to look to planning this year's trip and were tossing around Thailand, but I wanted to see if you all have had an epic culinary trips outside of the states.

Mostly we will be looking to enjoy the local culture/food and take some cooking classes.

I think Europe presents a whoel slew of options, but I am also curious to hear what you all suggest outside of Europe as well.

Check out this month's Gourmet. I have no opinion on their recommendations but it will give you a lot to think about.
