Alright, took one for the team.
I went by Kadds today and ordered JD's Teaser Platter which consists of 1/2 slab gourmet baby back ribs, 1/2 slab of the King ribs with an order of rib tips,a dinner roll, and choice of 2 sides.The gentleman at the counter suggested cole slaw but since I hate slaw, I chose baked beans and mac & cheese. A small container of tangy bbq sauce was also included. There was more than enough food for 2 people.
First, the rib bones were relatively soft(?). As I understand it, smoking doesn't do that to the bones but parboiling does. I do believe they smoke their ribs but I didn't spot an outdoor smoker. The only indicvation of bbq came after I placed my order and the bbq odors started IMHO, they smoke their meat and then warm it up for individual orders because they don't do enough Ribs business to keep the smoker going all day. The baby backs had the least charring on them and were the most tender of the 3 but I've had better.
The other half slab had about 1 1/2 ribs that was dried up. Parts of 2 or 3 rib tips also were dried up and hard to digest. But overall the ribs and tips were tender with the tips & king slab more flavorful.
What I'm told by my friends is that if a good rub is used, there would not be an overly salty aftertaste. Which was unfortunately my experience.
The sides were sort of bland. The beans did have some bacon bits but nothing stood out.
The counterman did say the bbq was very good particularly the pulled pork & beef brisket. I may try that in the future but not right away. Perhaps another poster can go and confirm my experience or if they have a different one, provide their account. I suspect the purists in the forum might have a problem with Kadds' ribs.
It wasn't a bad experience but then again I find Gale Street Inn ribs acceptable. For bbq, I would not be in a hurry to go back.
