    Is there anyone in town who sells antique riddling racks? or does anyone have a good reputable source elsewhere?
    is making all his reservations under the name Steve Plotnicki from now on.

    Hi,

    The Widow on Windsor in Springfield, Ill (217 744-3735) carries old riddling racks. I do not think they are antiques.

    Ahhh, but of course. Since I've been a winemaker for over 35 years I knew what a riddling rack was, but in the context of sparkling wine making. Couldn't figure out what it was doing as a topic in "Shopping and Cooking".

    So now I understand.

    But the ones I think about nowadays are automatic, like these in a Spanish cava:

    Absolutely- my vision of the space is to turn it into a space similar to that of the caves at Schamsberg- dark, with dull lighting and an impeccably clean space in which to store wine as well as to have people over for tasting.

    Interesting DIY on riddling here. They do mention a source for DIY riddling rack plans, but it's not online. I know I saw some being built on a design show, and they looked dead-easy to make (a hole saw bit, wood and hinges and you're there). Interesting that this is clearly a popular design element, and yet there don't seem to be a lot of sources for them.
