I wonder about the execution of these hamburgers. A friend just returned from touring Paris with three grandchildren ages ranging from 7 to 11. They tried and rejected the hamburgers as not tasting right. They enthusiatically embraced steak and frites, instead.

They should have first read Calvin Trillin's "Travels with Alice." One of the funniest essays involves his repeated visits to fast-food restaurants in Paris with his daughter to sample hamburgers!

I loved this article-it shows the triumph of simplicity and good flavors winning over a nation with a deeply embedded culinary tradition. I thought that one of the recipes for a pine-nut thyme burger sounded like something high on the list of the my burger variations to try. Anyways, it still has yet to be seen if the French will catch on to Mexican food. The last time I was in Paris, I spotted a chain called Indiana that served Tex-Mex--my friend friend Julian, who lives in gay Paree, informs me that it is a great place to go for a burger. Heh. One day, cebolla y cilantro for all!
