Now here's a topic I like! My new favorite 'rita recipe is both easy and cheap, given that limes are 15 for a buck at Rogers Park Fruit Market. My batch makes a blenderful, but seems pretty easy to multiply...you'd just be running the blender a lot.
7 limes, quartered
4 cups water (or fill your blender bowl)
1/2 c sugar
Dump everything in the blender, and blend for 10-15 seconds. Strain into a pitcher. Chill. Voila!
No more juicing limes, the oils in the zest turn up the volume a bit, and I like the refreshing slight bite at the end from a hint of rind. Sometimes I toss in some strawberries, or peaches, mangos...think I'll go pour myself a 'rita now, from the pitcher in the fridge.
