My brother Tom introduced me to Pasta Nostra in Norwalk, CT, years ago. I have been there a handful of times and each meal I have had there has been perfect. What do I mean by perfect? That's hard to say. It's kind of like some other things: you know them when you taste them, or, in this case, see them.
The Nantucket scallops, for instance:

Raw, lightly dressed in lemon and oil and hot pepper. They are in the running for the best thing I ever ate. Antipasto misto was excellent as well:

House-made fresh linguine with littleneck clams:

Short ribs of beef stew with gnocchi:

This family picture gives an idea of the atmosphere of the place: Small but not crowded, busy, but not rushed. Low enough lighting, unobtrusive, professional service with flawless timing. Note the clean plates.

Pasta Nostra gets a nod, but no rave from Zagat's. It has to be the most underrated restaurant in Fairfield County.
