    We had dinner a couple of weeks ago at Hub 51. Not overly impressed with the food and felt really rushed once we got to sit down after a hour and twenty minute wait, but we did have a great dessert. They have a delicious carrot cake. 4 dense layers, not overly spiced with a delicious cream cheese frosting. The cake was very carrotty, no nuts, raisins or pineapple and sooo good. I looked though most of my cookbooks (and I have a LOT) and can't find one that I think would be similar. Any of you have a recipe that sounds like my description? Thanks in advance.

    The Joy of Cooking has a great carrot cake recipe. I'm not sure how similar it is but you could probably make adjustments.

    I think my favorite carrot cake with maple cream cheese frosting recipe fits what you're looking for. The recipe calls for walnuts, which I like, but you can just omit them.

    It is funny that you suggested that recipe. I just made it on Sunday. It is great. I suggest upping the maple, but that is a personal thing.

    This was a great piece. The comments weren't too bad. I actually want to make it. May leave out walnuts and add cream cheese frosting.
