Haven't been there but saw the LA Times article on this new "emporium for the encased". Links to LA Times article and their food menu below.

I'd say Jody Maroni's (the definitive encased meats emporium) on the Venice boardwalk was the more likely inspiration for both places. Jody's by the way, in my blasphemous opinion beats Doug's easily, and they make them, not just source them.

There's at least one Jody Maroni's on the Ohio Turnpike (somewhere between the Indiana line and exit 142, maybe at the mile 100 rest stop). The one thing I had from there wasn't too impressive. Should I assume that like many name operations, the franchises can't be held as representative?

I would also agree that the N. Ohio Turnpike location is pretty miserable and quite expensive. Fortunately, the operation is rarely open when I have been through the rest area. (I have never understood why, especially during holiday periods, that places like Starbucks and most decent options in the rest area have limited hours.)

Yes. I'd say it is fair to assume that like many name operations, the franchises can't be held as representative. Uno's comes to mind. Get thee to the beach, sample 5 or 6 (they let you try any ones you want for free, Jody used to just slice whatever you asked to try) and then see what you think. Yucatan chix w/orange or lamb w/pine nuts and harissa were a couple of faves, but I must admit, it's been awhile since I lived there.
