Anyone have a good source? I can't seem to find it locally nor can I bear to pay $12/lb. for a cut of chuck at Paulina.

I'll second the request. I was just looking for something like this cut (fresh, reasonable, not quite dry aged bone-in strip-level).

Abraus, how were/are you planning to prepare if you landed it?

I saw flat iron cut steaks at Holzkopf's (formerly Bornhoffen's) meat market the other day. I don't recall the price but they are usually very reasonable in their pricing. It would be worth a call. If they don't have it, they'll get it for you if you order in advance.

    Hi,

If you know what you are looking for, you should be able to purchase flat iron steaks at any location that breaks down a shoulder clod or top blade roasts. The cost should approximate $4 per pound.

    Dominicks definitely has them.

Thanks. I'll check Dominick's and the place on Broadway. I asked at Jewel last time I was there (I rarely buy meat there, but again, I'm looking for a cheaper cut) and the grizzled meat guy said they used to have them, but "they went over like a lead balloon," and they just ended up grinding them.

I had some over the holiday just seared in a pan with Penzey's Chicago Rub on both sides. These were from a good meat market in Kansas, but were still just about $5-6 a pound and were awesome.

Just got off the phone with Holzkopf and Dominick's. Dominick's has them on sale for $3.49 a lb and Holzkopf has them for $8.99/lb. I'd prefer to go with Holzkopf, which I'm sure is a higher grade meat and local to boot, but for over double the price, I'm afraid I'll have to go to Dominick's.
