Nice quotes regarding Thanksgiving fare from LTHers Gary Wiviott David Hammond and Vital Information:

From With leftovers, there is no shortage of recipe ideas:

I prefer my leftover turkey straight up, typically on a toasted bialy with mayo -- Hellmann's only -- lettuce, tomato and thin slices of raw onion. Being a BBQ guy, I more often than not smoke turkeys and absolutely love soup made from the bones. Smoked turkey soup is a joy to behold.

    -- Gary Wiviott, LTHForum founder

From Talking turkey with local foodies by Monica Eng:

Dave Hammond, Chicago food writer and longtime food blogger: "We've screwed up the turkey for the last two years with a Hoka and Red Bourbon [both Heritage breeds], both of which we brined ... they were too dry. So this year we are getting a turducken from Chef Efrain, and we'll just go pick it up on Thanksgiving Day from Honky Tonk BBQ (1213 W. 18th St.; 312-226-7427) so we don't have to cook it and we know it will be good. The oven won't be occupied on Thanksiving Day so we can focus on the side dishes."

Rob Gardner, Oak Park lawyer, locavore, foodie and founder of localbeet.com: "We're going to my sister's this year so the turkey won't be very good."

    Nice job, you turkeys!

    Hi,

I got an e-mail from a friend who knows me via other circumstances. He said there was a dialogue on Steve Dahl's show this morning about LTHforum.com. His ears perked up when he heard my name. I have no idea what context this may be. Can anyone offer some idea of what was said on the show?

    Regards,
    Cathy2

I have no idea, but the full show is here, broken up into hour-by-hour audio files. Find out about what time it was and you should be able to find it:

Dahl read an article that was written by or about David Hammond in the Oak Park newspaper. As he read it he was making fun of everyone involved including LTH Forum. It lasted about 20 minutes. It happened about halfway through the second hour.

EDIT: Apparently it was the third hour.

I had to laugh at Dahl's astoundingly accurate impersonation of my voice and his portrayal of Oak Parkers.

The Wife was ticked about the unflattering picture of her, but hey, can't please everyone. She also wrote to the Wednesday Journal to correct them: they quoted her as saying my argument was "speechless," and she actually used the word "specious." My recommendation to The Wife: when speaking to the media, use words that most people understand.

Yeah, it was funny to me knowing you and hearing how he portrayed you. But hey, any pub is good pub, right?

I think he was actually a bit envious that you had an article written about you just for not liking traditional Thanksgiving fare. He did complain about about how his dislike of Christmas had netted him zero pub. :D

Attn LTHForum: Steve Dahl wants you to know he doesn't like LSC eggrolls, and it's other people's fault that we think he does. (Hear his 8-minute run-down of how many times his name is mentioned on LTH on the previously-mentioned hour 3 of the podcast - Ronnie, I think you're quoted...)

Commentary on the aforementioned newspaper article is in hour 2 of the podcast at 35:50. In case you're wondering, I was prisoner of the dishwasher repair guy this afternoon.

    Hi,

In the segment where he was distressed to find his eggroll choices discussed, especially when the core information 'LSC was his 2nd choice' appears to be wrong, the following people were quoted: mrbarola, Cathy2, gwiv and sweetsalty.

Gave a much needed laugh for the day.

It's also nice to hear folks acknowledge the significance of Chef Louis' contribution to Chicago's --and America's-- culinary history. Thank you!

Here it is, not sure if it changed any for print:

I enjoyed your piece on Charlie Trotter quite a bit, but boggled at the description of Trotter as "Chicago's first celebrity chef." That's like describing Richard M. Daley as Chicago's first all-powerful mayor. Louis Szathmary ran a world-famous restaurant, The Bakery, for 27 years in Chicago, closing not long after Trotter opened his restaurant a couple of blocks away. Like Trotter, he wrote highly influential cookbooks ("The Chef's Secret Cookbook," "American Gastronomy"). Like Trotter, he was a familiar fixture on TV, turning up on everything from Mike Douglas and Dinah Shore to Phil Donahue and Oprah. Like Trotter, he knew how to package his own image—as an accented but accessible gourmet chef--brilliantly. Like many of Trotter's proteges, he was an avant-garde experimenter and dabbler in food science, who had his own business consulting with many of the city's and the nation's food conglomerates on packaged food products. And like Trotter, he significantly changed the way Chicagoans, and to no small extent Americans, viewed chefs and fine dining.

Szathmary has scarcely been dead a decade, and the city is undoubtedly still full of people who dined at The Bakery in its prime, so it's unfortunate to see his legacy so quickly forgotten. Yet just as Alinea and Moto would not exist without Trotter's example, I can't help but think that Trotter's restaurant would not have survived its early years without a paying audience whose expectations, in large part, had been refined and made more sophisticated by Louis Szathmary.

He also looked way more like a chef than any celebrity chef working today. Based on phyiscal appearance, I think his top two career choices were "chef" and "professional Santa Claus".
