    Great day for a BBQ guy and friends in sunny Houston Texas, first a Klose BBQ Pit plant tour by Dave Klose then Dave took us to Burns BBQ where we had the pleasure of meeting Roy Burns Sr. and family.

    For those not familiar with Klose BBQ Pits they are the top tier of steel off-set firebox BBQ pits. Dave Klose is a dynamo, ideas and stories flow like water in a rainstorm, charming, energetic with just a touch of the rascal, he would be a terrific fellow to go hoist a few (too many) with.

    Burns BBQ provided a solid tug to my BBQ heartstrings, brisket, spare ribs, sausage and the occasional chicken smoked with skill on wood burning BBQ pits. Burns is a family operation with Roy Burns Sr and three sons, along with various other family members on hand. I really appreciated the back of the house access and overall graciousness of the Burns Family. Not to mention the love, care and quality of the BBQ.

    That's a nice looking tour of the Klose factory. How ws the brisket at Burns? To my eyes it looks a bit dry.

    Good eye, the portion of the flat pictured was on the dry side, point, not pictured, moist. Black pepper laden beef/pork sausage and spare ribs hit the mark, in particular ribs, light smoke, definitive bite to the meat, but not chewy.

    Having had brisket in three spots this trip (Burns, Goode and Company, Pizzitola's) and a number of other Houston spots in the past (Thelma's, William's Smokehouse [RIP], Otto's [RIP]) Houston 'City Style' seems to run slightly dryer/leaner.*

    I was lucky enough to be part of the Klose tour and bbq feast at Roy Burns. Dave was a great host and made us feel like old friends.

    Steve, as you noticed the brisket was dry and was the weakest part of the trilogy we were served. The spare ribs were delicious-the fat was smoked out and the meat was juicy with some fight to it. The sausage was great. Sauce had a nice tang and wasn't too sweet. No liquid smoke. Great baked beans with a wonderful smokey flavor and mustardy potato salad which worked well with everything. I suspect we just caught the brisket on a bad day.

    So when is the new pit arriving?

    I sure miss their BBQ forum. I want a 48" Grill Chef.
