I recently bought a hen from one of Chicago's live markets. In the bag with all its guts, I noticed several orange balls about the size of a quarter. When I was cleaning it, I noticed more, smaller balls in the cavity. They were squishy, and seemed to be filled with liquid. Does anyone know what these are? My guess would be some sort of fat, but I'm not sure.

Could be eggs. This was quite common when I was growing up in 40's & 50's. My mother would cook them in chicken soup and they were very good.

What you describe are embryonic eggs--considered a delicacy, according to this piece in the NY Times: What the Egg Was First.

    Did you eat 'em?

No, I didn't eat them and now I'm regretting it. Hopefully next time I will find some more.

    Thanks for the help!

I'm curious about the buying experience. Did you pick your chick? Do they slaughter while you wait?

Do tell....enquiring minds and all that
