We received a cookie press as a wedding present and I have used it once, making the vanilla shortbread-ish recipe that came with it. It was good, but the cookies came out rather crispy/hard. Not too hard, but I remember having a spritz cookie at a holiday party once that was soft and melty. Delicious, and something I would love to recreate. Kind of like the "cupcake cookies" available at Jewel in texture, but more buttery. I am thinking of plain vanilla/butter flavor, but if you have another favorite, feel free to share as well. I don't remember them having an icing, but I'd also be grateful for an icing that stays soft (doesn't get crackly, if that makes sense).
