    Can any one recommend a cheese plane / slicer that actually works, and doesn't grab, stick, or seize when cutting cheese?

    I've been through a plethora of slicers, and none behave as I want. The best one I've ever seen is the one the folks at Bobby Nelsons in Kenosha (right next to Mars cheese castle) use to slice off samples for tasting. It looks pretty much like my ancient Hickory Farms cheapie, except it has little wavies ground into it, much like a Santoku knife edge. That seems to keep it from sticking when cutting cheese. But they've had it forever, and don't know where it came from. It's probably older than I am, or most of you are.

    I bought a Henckel from a kitchen store (not the one with the devil horned tip that I see online everywhere), and was disappointed with it. It had a serrated edge, about the only thing it would slice at all was aged swiss, and that was too thin.

    Ditto for a Zyliss, which I had high hopes for given the ridges in its blade which turned out to be uncharacteristically bad Swiss engineering; Image wouldn't slice anything well, stuck to everything, the funny shaped blade instantly binded when cutting, and clogged with just about anything I tried to slice. The only products I've ever had from either company that was unsatisfactory :(

    I found what looked like a nice German stainless cutter that had a thumbscrew to adjust the cutting thickness Image . Absolute CRAP. It either grabs immediately if the cheese is at all soft, or shatters it rather than slicing if it's hard like 5 year old cheddar. And it was more expensive than either the Henckels or Zyliss :(

    Ironically, the only thing that works at all consistently is a $5.99 marble wire slicer I picked up a couple years ago at Woodmans. But it's a wire, not a plane, and not what I'm looking for to slice cheese on a regular basis.

    I saw an Oxo plane during the holidays, but now can't find it any where locally. The one I saw had the wavy blade, but all the online images I've found don't have this, except for their own web site Image The package said "Satisfaction Guaranteed" so I thought I'd try one if I can find it locally, and return it if it's as poor as the others I'm stuck with.

    So can any one recommend a cheese plane that will actually slice swiss, cheddar, havarti, gouda, asiago, provolone, wensleydale, or whatever other real cheese I want to put on my sandwich?

    I must say all the knifes are good & very cheap also i can buy one of them . tell me where should i get it.

    Hi,

    That's a truffle cutter and works very nicely for it's intended purpose. It is also useful as a narrow mandoline but is not intended for soft cheese.

    Well, I searched on WMF adjustable cheese plane, and found lots of hits (almost a thousand) showing this item, so it would seem to me that it's being sold as a cheese slicer. And I can verify that it does a really LOUSY job slicing cheese. As I've never had a truffle, I can't tell you if it slices them well or not.
