    Does anyone have any thoughts on where I can find this sugar substitute in the Chicago area?

    You know, cooking just like Grant Achatz isn't hard if you just make a few smart, time-saving substitutions:

    Prawn with yuba, miso and orange peel: “It’s too hard threading shrimp onto one of Alinea’s fancy little pieces of metal, and then wrapping orange peel around it. I just take an Orange Dreamsicle and then stick shrimp onto it with frosting from a tube. Sprinkle with seasoned salt and your family will love the presentation and the taste!”

    Hi,

    I doubt you will find isomalt in chicago. You may want to call the local pastry shops or restaurant to ask about availability.

    Isomalt is not really a substitute for sugar, it's not very sweet. It is wonderful for making clear windows for gingerbread houses. For this application it has a shelf life; After a year of careful storage, it begins to color a low temperatures.
