Tomato season:
5 or 6 medium size tomatoes
1 small can of tomato sauce
3 habanero chilis
3 serrano chilis
4 cloves of garlic
1 bunch cilantro
Fairly large pinch of kosher salt
1 medium purple onion
Put all ingredients in food processor to combine. I let it go for a while and then give it a few pulses
Just to make sure I don’t end up with any big chunks of habanero! It took me a few times to get it down
so adjust as necessary to taste.
Outside of end of July – Oct. I use a 28 oz. can of whole plum tomatoes and 1 or two small tomatoes for texture
And no tomato sauce. If you ever find either of the chilis in red use them. A little more heat but a lot more flavor.
