I went shopping at Saraga (Indianapolis) today and picked up some beautiful, sliced pork belly...no definite intentions, just looked really good. They've been revamping this wondermart of international edibles; carrying more house-made(or at least packaged) products and upgrading their somewhat scruffy past. There's a halal butcher on one side and a pristine seafood counter carrying whole fish, head on shrimp etc to the opposite. I also saw tasty looking goat chops and parts all kinds from silken sheets of pigskin to bulls' "eggs." Also, mosaics of shabu-shabu ready thinly-sliced meats. They're doing a really nice job with the revamp.
so...now, I too, am in the "have pork belly" what next situation...will post when I decide the best way to go.
