Arkady here and I wanted your input on this matter.
1829 Simpson, Evanston (property needs re-zoning). I am thinking QSR with truly short lead time that offers enlarged size pelmeni, vareniki (known here as pierogi), chebureki, khachapuri, shashlik, kharcho, napoleon cake, potato pastry... and couple secret savory items. I realize it is a "dicey" area at this point of time, but still believe it will work out with great food/sweet prices, internet ordering and virtually no competition in this segment. No Georgian bread in the plans... but how does Dumplings&... sound ?
BTW, the previous place in Niles was setup for carryout and wholesale only and we had no customer bathrooms - I am reading (8 years later) some were unhappy with the service. Its because we couldn't offer in that little dump.
