    Hungry at lunch, thought about Matzoh Brei since I just bought 5lbs for $1.99 at the local Jewel. Then I spotted some ingredients hanging around the fridge, and voila:

    Equipment: Nonstick pan, collander, mixing bowl, knife, spatula (my favorite flat-ended bamboom spoon)

    Ingredients:
    2 Sheets Matzoh
    2 Eggs, beaten
    1/2 tsp salt
    Black Pepper to taste
    1/2 small onion, chopped
    2 Tbs butter (should have used oil, the following ingredients were decided on after the butter was melted)
    Several stalks and leaves chinese broccoli, julienned, about 2/3C
    1 large clove garlic, sliced (2-3 is probably better)
    1 Tbs Thick Soy/Kecap Manis

    Instructions:
    1) Melt butter on medium, add onions and sautee until softened, maybe a little brown on the edges.
    2) Add the broccoli and garlic to cook during the next step
    3) Break matzoh into collander in pieces up to 1.5" across, and run water over it about 15-30 seconds until softened a bit
    4) Toss matzoh into egg with salt and pepper. When mixed, pour into pan and stir constantly until eggs are set and broccoli mixed in.
    5) Drizzle thick soy over mixture, toss to coat evenly
    6) Serves one hungry person for lunch, probably two reasonable servings

    Sounds very good. I will have to try this during Passover for my pad see ew-loving son.
