Making cheese fries with Merkts

I'm looking to make Merkts cheddar cheese fries at home and I was wondering, is the Merkts was melted with another type of cheese? I figured the sharp cheddar of the Merkts alone would be to too sharp and overpower the taste of the fries itself. Thanks in advance!
