    Just got back from Turkey on Sunday night, and among my acquisitions there was a 100g packet of kofte spice mix. I've been poking around for recipes, but so far all the ones I've found call for individual spices, and so I'm not sure what the appropriate proportions of the baharat to meat, bread crumbs, etc. should be. (And it doesn't help that I have pretty much no idea at all what spices are in the baharat.) Any ideas?

    Also, recipes for Turkish-style lentil soup would be appreciated.

    Not sure about proportions, but baharat usually contains the following spices: allspice, black pepper, cumin, cinnamon, nutmeg, and perhaps cardamom. I would go heavy on the heavy on the allspice, less so on the rest of the ingredients, especially the nutmeg and cinnamon and cardamom (if you use it).
