    Hi --

    Where do you all find SAF-Instant Yeast in Chicago? I've looked and looked but can't seem to find those big, vacuum-sealed packages. Any advice?

    Speaking of instant yeast, how long does it last kept in the freezer (which is where I remember Cook's Illustrated telling me to keep it).

    I keep it about 6 months in the fridge. It keeps better in the freezer - maybe 12-18 months. The expiration date on the package is usually two years after it was packaged, but since it is so cheap I tend to replace my old yeast faster than that.

    Make sure you bring it to room temperature before using.

    I kept some in the fridge for at least a year and it still works fine.
