    I want to bake authentic cannelle. I may have asked here before--but, does anyone know where you can get the paraffin in town?

    I have seen it at Joe Caputo's.

    I use beeswax.

    Hi,

    It can be found wherever canning supplies are kept in the grocery and hardware stores. It is no longer recommended paraffin be used for canning, but it always in the canning section.

    I use beeswax.


    I've used beeswax as well and all the recipes I've seen recommend it. I've never seen a recipe with paraffin.

    Lots of stuff on Google with a number of different spellings. The correct spelling is Canelé or Canelés. You really shouldn't ask this question because it could become one of those consuming obsessions requiring a lot of effort to perfect. It is a little custard cake from SW France. Astoundingly delicious but not easy to reproduce since the outside has a totally different texture and taste than the inside. Hardest part is telling when they are baked to perfection since there are no visual cues.
