I recently stopped by the Publican on Fulton Market and was blown away by their beer list! Wow! Did I just fly to DC and end up at the Brickskellar by accident? Anyone know of another restaurant in Chicago that can match their selection? If so, PLEASE let me know. I hope this is going to be the start of a trend for our fair city! Chef Kahan rocks!

What do you mean that they do custom beer?

Sorry about that. Apparently, they occasionally do a beer dinner where they pair whatever food they're serving with specific beer.

Was on their website to look at their beer list when I found this link:

Looks like they're brewing a custom biere with the New Holland Brewery for a dinner in late august. They've made two short videos showing a bit of the process and Exec Chef Paul Kahan looking like he's been enjoying "some beer," as he puts it.

Thanks, though "few" is a bit of an understatement. Never knew the place had gained such notoriety!

Chicagoist's Chuck Sudo has an excellent series of posts about riding along with the Kahan/New Holland process, starting here.
