    Looking to get my smoker going for a few butts this Saturday Didn't get a chance to look at the ads this week to see of anyone has any deals on butts.
    Anyone aware of any $.99/lb sales this week?
    Looking for 2 in the 8lb range each.

    Peoria Packing.

    Not sure of exact price, but I'd be surprised if they were much over a buck a pound. That, plus the shoulders/butts are always really nice at Peoria Packing.

    You know, I have never found the butts at Peoria to be all that nice looking. If anything they have always seemed rather small and not very "solid". Guess that is why I would always get butts at the local chain grocery store and stick to ribs, etc at Peoria.
    But worth another look if it means not paying whatever regular price is at the chains if they are not on sale.

    I just got a couple of beauties at Peoria last weekend. They were not small by any means (the largest was over 10 lbs) and were quite solid. Both had substantial bones, something which the supermarket vatiety can't always say. Sorry, I don't remember the price I paid, but it was the usual relatively low price. Definately over $1.

    I've found pork butt, pork shoulder, spare ribs, sausage and chicken consistently good at Peoria, loin back/baby back variable and beef so-so.

    With bone-in butt I prefer to have, as much as possible, an evenly centered bone, which radiates heat out evenly, and particularly like the fact Peoria typically has 40-50 pork butts from which to choose.

    I just called Peoria, bone-in pork butt is $1.29/lb and skin-on pork shoulder .79c/lb

    I plan on going there myself today or tomorrow, going to do a few racks of spares and a butt or two.

    I usually get mine by the case at Sams Club. Case price last weekend was 1.17 a pound
    and Sam's butts are consistently good..I get them from there all the time now..you will either get IBP or Farmland (or is it Heartland?)... they average 8 to 10 butts per case.

    Well, I will have to stop into Peoria in the next couple days. When I am there it seems that the butts are usually only there in limited quantity. I don't think I have ever seen more than 15 or so out. Perhaps it is just my timing, but to make sure, the butts are located on the table with the spares and no where else, correct?

    Yes, you are correct. They are on the Westernmost table next between the baby/loin backs and the spares along with the picnics. The earlier you arrive, the better the selection. I went at 8:00 on Saturday morning and the table was stacked 3 high with at least 50 (probably more). I went back yesterday at 2:30 P.M. to get something else, and I noticed that there were only 4 - 5 lonley looking scraggly butts sitting on the table.

    Only issue is that earlier is not better for me and I have to start the meat on Friday night to be ready Saturday afternoon. I generally go to Peoria on a Thursday or Friday after work, so I can pick up meat for weekend smoking.
    G Wiv, if you go in next day or so a smentioned, please let me know the butt status of Peoria as it seems I am usually there during the scraggly season ;)

    Can you pick them up on the way to work and keep them in an ice chest all day? Or ask them to bring you some others to look at.

    Here is your 8am butt report. :)

    Peoria Packing 6:45am 3/31/05, 32 really nice looking pork butts on hand and they were still putting out meat. Today the butts were stacked 2-high, if I remember correctly, on a busy day, pork butts will be stacked 3, maybe 4, high. Price was $1.29/lb.

    Spare ribs, which looked nice, as always, were $1.59/lb, which is a good price, and baby back/loin back were $3.99/lb and looked somewhat scraggly.

    Thanks G Wiv. I am planning on heading over there today after work. If they have a reduced supply I figure I can always ask them to pull some from the back for me and if that doesn' work I have 1 more day to worry about it.

    Well just an update. Hit Peoria Packing this morning at about 9am or so. Had maybe 30 or so butts out on the table. After some digging found 3 larger sized ones for a total of 21.8 lbs. Guess they look smaller as they are not the big cube looking ones I am used to from buying the 2 pack in cryo from grocery stores but the weight is about right, rather they are sorta flat.
    Also grabbed 2.4 lbs of the bulk hot links (are these any good? have never tried them from Peoria. Figuring 2 hours or so at smoker temps, this sound right?) and a pound of bulk bacon to make my fav baked beans. These are Alton Brown's "The Once and Future Beans" that cook in a crock pot for 8 hours.
    Planning on firing up the smoker at about 10pm this eve to be able to pull the butts off at 4pm or so on Saturday and watch Louisville knock of the Illini.

    I have only made those beans once before and that was in the oven in my dutch oven.
    Generally don't have room on the smoker as I always have meat on both racks. As cheap as the meat is if I am gonna do it, I may as well do a bunch ;) Hence why I have 3 7lb butts on for a party of 10 today ;)

    Hi,

    I just returned from Peoria Packing. Pork butts are on sale for $1.09 per pound, skin-on pork butts are $0.59 per pound.

    I bought a 9+ pound rib attached pork belly for making Sundevilpeg's Char Siu, AKA MUU DAENG to marinate starting today and smoking Tuesday. This was $1.39 per pound. I bought this cut because after I remove the ribs, the pork belly cross section is thicker than the pork belly trimmed of the ribs at $1.19 per pound.

    I also bought just over 4 pounds of oxtail for $2.99 per pound. The same at Jewel cost me $3.99 per pound around Christmas.

    It's almost one-stop shopping: in the parking lot I was offered a deal on white tube socks.

    Hey Cathy,

    You'll really enjoy the bone on belly char siu. When I prepared it, I cut the bone off and cooked it as belly and some spareribs at the same time. I made the char siu along with some other stuff at the same time, planning to use the char siu later in the week for some stir fry. I had a hard time not eating it all right on the spot.

    The rib attached pork belly at Peoria are skin-on. I'd suggest scoring the skin, as Steve did, before putting it in the marinade for better penetration.

    When smoking off-set style, which is effectively what the WSM with waterpan in place does, I typically remove pig skin. Temps aren't high enough, and there is no radiant heat as in direct style BBQ, to crisp the skin. YMMV
