I just read online that coconut flour is low carb. I love coconut, but where can you find this? Also, has anyone used it before?

I think I have either seen it at Whole Foods or at Tai Nam market on Broadway just south of Argyle. I have been curious about it--let me know what you try...

Looked for this a little at Fresh Farms but didn't see it. However I ran out of time to go through the Indian section at the end of the store so it might be somewhere.

Bob's Red Mill makes this and I swear I've seen it somewhere, maybe Whole Foods.

I just bought some from Whole Foods. I got the Bob's Red Mill brand. I know it's primarily used for gluten-free baking but I love coconut so I bought some hoping to make coconut flavored baked goods even more coconut-y. Anyone have much experience working with this stuff? Is it processed so there's no coconut flavor left?

I'll probably start with a batch of coconut pancakes and see how they turn out. There's a recipe on the package. I may also try a batch and sub coconut milk for regular milk.
