Cato Corner Farms Cheeses

I might have posted this in Beyond Chicagoland. But then I learned that the wonderful cheeses from Cato Corner Farms are available in Chicago at Pastoral. I don't believe in keeping really delicious things a secret. That would feel like hoarding.*

Cato Corner Farm is in Colchester, CT. I came upon their cheese by chance at Rosedale Farms and Farmers Market in Simsbury, CT. Something seemed familiar about the name of the cheese I bought, “Brigid’s Abbey.” Then I remembered that this cheese had been a selection in the cheese of the month club gift I once received from my brother, Tom. The cheese restaurant, Artisanal (in NYC) offers this as a gift package, and I have to say, it is a very nice thing to see a new cheese on your doorstep each month of the year.



Their shop is open for tasting weekends. And taste I did. Then I wanted to buy a piece of each of the cheeses I had tasted- that would be all of the cheeses offered- about 10. The nice lady who ran the shop was very patient with me. I learned that it’s not possible to visit the cave due to food safety concerns, but apparently Jacques Pepin had been given the full tour—all suited up for the occasion.






It’s tough to describe these cheeses, but fortunately, they are available in Chicago.
I particularly liked the “Vivace” and the “Womanchego” along with the “Brigid’s Abbey. Try them. I think you will be pleased.

These flowers were for sale just a mile down the road that day. Beautiful things are for sharing, too.
