    I'm looking for a tried and true recipe for gazpacho. Searching the net turns up so many differing recipes, it is hard to know which of them would be best. If you have one you use and enjoy, I would love to have a copy.

    thanks for reminding me of one of my favorite warm weather treats. gots ta make a batch.

    i use this recipe http://www.recipesource.com/soups/soups/03/rec0391.html and love it. doctor it as preferred. i ususally add some tabasco and, depending upon how hot i want it, some jalapeno. it's much, much better after having been refrigerated for a day, so try to make it ahead of time.

    Loosely based on the Food of Spain from Time-Life's Cookbooks of the World:

    1 or two onions
    1 cucumber
    1 bell pepper
    couple cloves of garlic
    a little dried red pepper
    about 1 cup of breadcrumbs
    ~1 tbsp red wine vinegar
    5-6 fresh peeled tomatoes or a can or two of crushed tomatoes

    Puree these ingredients in a blender. I don't think I missed anything.

    Stir in 1-2 tbsp olive oil
    Chill
    Serve with garnish - chopped tomatoes, bell pepper, etc.

    I don't think there IS a true gaspacho recipe. The preparation varies from cook to cook and with the sorts of ingredicents that happen to be available. I think, however, that it's pretty close to essential to include (to taste) cucumbers,onions, garlic, tomatoes, tarragon and oilve oil.

    My mom's recipe, which is not particularly authentic, is:
    dice: 8 large tomatoes, peeled and seeded
    2 large onions (not-sweet)
    2 green peppers, seeded
    2 cucumbers, peeled and seeded
    mix with a quart of tomato juice or v-8, and add to taste:
    red wine vinegar, olive oil, garlic powder, lemon pepper, hot sauce, S&P.
    It is better after a day in the fridge. When I make it, I use a very coarse dice, and fresh garlic in addition to powder. It comes out as much a salad as a soup. I serve it with curried mayo.
