Does anyone know of any place in the metropolitan Chicago area that sells Muscovy ducks (fresh frozen or alive), whole or parts?

    Judy,

Chicago Game stocks Muscovy duck along with a wide range of upscale and/or hard to get products.

I've seen Muscovy at both Fox and Obel and Whole Foods on Huron. Whole Foods on Huron is your best bet, of the Chicago Whole Food stores, for upscale items such as fresh lobes of foie gras, Muscovy duck etc.

Paulina, Cizmer and Specialty Game may have Muscovy in stock, I suggest a call. If you are looking for live birds you can try Chicago Live Poultry, John's or Ciale's.

In all instances I suggest calling first. Good luck and please let us know what you find.

    Enjoy,
    Gary

Incredible variety of everything upscale and/or hard to get. Fresh foie gras, truffles, caviar, elk, venison, cheese, chocolate etc. Only downside is no display and, some items, need to be ordered in larger quantities than the average home chef might need.

    Thanks for the tiips.
    Chicago Game has them frozen
Whole foods on Huron doesn't have any. When I called and inquired, the person snwering the phone had no idea what I was talking about. I asked to speak to a butcher.
    Czimer has them frozen
Specialty Games's phones have been disconnected
    Ciale's Poultry has them live.
    John's has them occasionally.
We probably will go with a live duck and will let you know how it all turns out.
    Thanks again, judyd

Don't know for sure, but you might try Schmeisser's Meats, 847-967-8995, 7649 N Milwaukee, Niles.

I used to buy them right from the farmer over the WI state line. Can't remember where, but they advertised in the local papers in Lake Geneva.

Harrison's is my standard place for buying fresh Ducks, but they don't always have them, so call first. They'll even cut them in half the long way for you, perfect for cooking in the WSM (a practice I refer to as "Smoking Quack").

    Gary -

I thought you might get a kick out of that one. It came to me out of the blue one day w/ three nice fresh Harrison's ducks smokin' away in the WSM. Guess the barleywine could've had something to do with it.....

Went to Ciales yesterday and bought a muscovy duck. We were given a nice tour of the poultry cage room. Will cook tomorrow and report.

I knew when I unwrapped the duck that it was an old one. The fat was far to yellow. Braised in white white and celery, carrots and onions sauteed in goose grease. Made a paste with goose grease and flour and painted the duck. Put in a 325 deg oven for 90 minutes with many bastings. The duck weighed 8 # live. Taste was similar to a wild duck and tough. Glad we tried it but not worth the effort. Oh well.
