    Where is a good northside location to buy sausage casings, preferably on the smaller side so I can make many of diffferent variety?

    I'm using goat meat, so lamb casings would work well too.

    The only one I know of, but I'm sure there are more, is Northwestern Cutlery, which sells two sizes (I think) of casings. For more information than that, you'd have to ask them.

    Northwestern sells dry and, I'm pretty sure, not natural. For natural, as in from an animal, I typically buy from Paulina, which carries medium hog casings packed in salt, but I've also gone to Joe the Sausage King and, believe it or not, Whole Foods, and simply asked if I could buy some of their casings as they make sausage in-house.

    Grant Park Packing has them as does Peoria Packing. Peoria Packing has them behind the counter, you have to ask. Both sell natural casings packed in salt.

    Most any butcher shop, that makes it's own sausage will sell them to you and, I'd bet, most Mexican and/or full service non-chain grocers, such as Market Place on Oakton, Caputo's, Minelli Bros, Andy's Deli etc. stock natural casings.

    Suggestion to Griffin, Call First!

    I'm fairly certain you're right :) I never said they were the best casings, just that casings were sold :)

    just picked up some hog casing at Roselle International Market for the loukaniko (greek sausage) im making for Greek Easter this Sunday. Im sure you are far from Roselle but my point is that any place that makes their own sausage is bound to have casings in house (like this place). Came in a lb bag of brine already cleaned
