    I just searched this forum, but no mention of squab, except as a side comment. I'm up in Whitewater WI, but I get into town occasionally, so if it would be feasible for me to stop 'n shoppe somewhere to get some of these delights I would most certainly like to do so.

    Two things:

    1) Macfarlane Pheasants is located right outside of Janesville, WI. That is right up the street from you.

    I am not sure that they have squab but they have a wide variety of game birds. They would be able to direct you to someone selling squab if they do not carry it themselves.

    2) Woodman's also carries several game birds

    I looked at Woodman's, and yup, they do have quite a few things (quail, for example, and geese) but no squab.

    Haven't tried the pheasant farm, but I'll give them a call. Forgot about them--they've got retail, don't they? I seem to remember the sign out front.

    I thought I saw them the last time I was at Eurofresh Market (Rt 14 in Palatine) but that is a LONG haul from you. I checked out Joseph's Marketplace this evening (Rt 14 in Crystal Lake) and they did NOT carry them.

    Chicago Game (do a google search or search this board) has frozen squab, and quite lovely they are.

    Paulina Market usually has squab, poussin, quail, pheasant, goose, and wild turkey in their freezer.

    You could just stop by any park with some day-old bread, and bag yourself a dozen or two, really really fresh.

    But I doubt that's legal. :wink:

    Correct me if I'm wrong (yeah, like I really have to say that to this group ...) but I've always thought squab was pigeon young enough that it's never flown. So, legal or not, I doubt your bread/park method would work very well.

    nr706 is correct: squabs have not flown yet. They have more fat and are much tenderer than mature pigeons. Think of the difference between milk-fed veal and mature beef although squab meat is the same color as pigeon.

    Pigeons are pretty much unprotected by bird and game laws except for restrictions on using firearms in most cities. I would be willing to bet that sitting in a park with bread or bird seed and a net might make bagging one pigeon easy, but getting the second one could be pretty tricky. They are greedy and stupid but not that stupid.
